Update Apple device mappings

We use (at least two) different lookups to map Apple model identifiers (e.g. iPhone15,4) to legible model names (e.g. "iPhone 15"):

• core
  • this is (was?) automatically updated by a script which in turn uses a node module as data source
  • this node module has not been update in over a year, so the models are currently out of date (we already use the latest version)
  • we need to find another data source (though I didn't find a suitable one in a quick search), contribute to the plugin, or manually update
• profiling
  • I believe this is updated manually
  • this also includes heuristics do determin device class based on hardware specs

A couple other thoughts:

• This is an opportunity to lead the community by publishing and maintaining our own list, instead of always searching for new ones when the current one stops being maintained. We certainly can become aware quickly when we receive an identifier we don't already have a mapping for!
• We should consider also adding Mac model identifier mappings to the list
