3.2.3 was released after 3.3.0, so I'm assuming they can be co-installed
This isn't really true (except in the sense that anything can be co-installed if you try hard enough). Ruby supports major versions for three years after release and 3.2.x is still fully supported.
This is on my radar, but I'm waiting for a 3.3.1 at least to do it.
