[ ] Catalog which tables need to be versioned
[ ] Set up job to version list described above

Implementation note: In contrast to versioning in NF, which just includes several big portal tables, we are versioning many more tables on a project level. It is annoying to hard-code this long list ~so the script should have additional functionality to just list all the tables within the project and version them~ so we keep a materialized list in the backend project.
