When you launch YouTube video, it first launches HTML5 video, then it launches Flash Player video. I'm using YouTube Center extension which forces Flash Player, but I'm curious about that is it possible to prevent HTML5 with Chameleon so it would make YouTube more Flash Player friendly.

No, sorry, this doesn't seem in scope for an anti-tracking extension.
