enable more metrics in cilium/hubble #3097

We should look into hubble and check which metrics are exposed and which metrics can additionally be enabled.

This can help to get useful information about dropped connections etc. . Lets try different configs to get the bare minium of additional metrics that provide useful information.

Also it could be worth looking at https://grafana.com/grafana/plugins/isovalent-hubble-datasource/ to get a plugin for hubble as a datasource.
