update cryptography package in `install_requires` to latest #95

The cryptography package changed its versioning scheme (and also has new versions available). This PR updates setup.py to upgrade this dependency and also bumps the package version to 1.2.5.

Thanks @NotGordias. I defer to @gigatim, but in case you are using homebrew, you'll also want to update https://github.com/gigalixir/homebrew-brew/blob/master/Formula/gigalixir.rb

I opened the PR while reviewing a change to fix this build in nix (https://github.com/NixOS/nixpkgs/pull/155497). I'm happy to update the homebrew formula though, I'll look into that tonight!
