I'm thinking of using Github Classroom next semester and trying to figure out how grading workflow will work. Do folks just inspect the repositories manually? Or do you use pull requests for submission somehow?

A little bit harder for the teacher to merge all works. You need to be closer to the project. But once it is done, you can give more precise grades because you see all the steps
Each group with its own repository and you are just a collaborator
You still keep track of everything, but they merge the master themselves. You put issues and guide somehow, but they have much more freedom. In this case, the professor is not so much tied to the groups, and have more freedom also.
