TL;DR This PR sets us up to discuss our first official course pathway on GitHub Learning Lab! We'll be working with 3 courses.

Breakdown

• Course 1: Complete by Universe
  • Much of this material can match the first 15 minutes of the Probot workshop by @JasonEtco and @hollenberry
• Course 2: Complete by mid-November
• Course 3: Complete by mid-December
  • Much of this material can also include Wilhelm's Advanced apps workshop content

Notably:

• Solidified title.
• Added a note about permissions and decided to stick to a specific Probot app (reminder).
• Changed activity for course 2 (we can switch it back if it feels like too much or if we like the other better).
