If Orbital hangs you should be able to still switch VT with ctrl+alt+Fx. Can't you? I'll add the ctrl+alt+backspace binding, though.
For the mouse speed there's nothing I can do in Orbital or in Nuclear. It needs to be done in Weston.

I don't think I was able to switch the VT. ctrl+alt+backspace should be good, though at some point when there is a working screen locker there will need to be a better way of handling Wayland/Weston/Orbital problems, since you could just zap the server to get out of the screen locker.
I thought that the mouse speed setting might be exposed in plugin API and they just didn't want to clutter the configuration file. It occurs to me now that it is probably hardcoded, since Weston was originally supposed to be just a prototype. I will try asking the Weston developers about it.

In vanilla Weston, you can usually close Weston if it is hanging by pressing ctrl+alt+backspace, however in Orbital this seems to be turned off. Could you turn it on or make a configuration file entry for it, so that development is easier? Currently I have to reboot my computer if Orbital hangs.
One of the problems I have been having with both vanilla Weston and Orbital is that my mouse sensitivity is too slow. I have looked around for a Weston solution but I haven't found one. Is there a way to set the sensitivity via your Weston plugin?
