The Amazon river dolphins jump, while really cool visually, usually ends up beaching and killing them, making it hard to keep them in an enclosure that is decorated with things like lilypads, waterside trees and floating logs, as would be seen in their natural habitat, or in enclosures that dont have very high, somewhat unsightly walls.

Removing the jump would really help to solve this issue. While they can jump and such in real life, in minecraft, with mechanics and such, it's quite difficult to safely pull off a such a nice animation.
Describe alternatives you've consideredIn order of what I believe would be the best options :
Replace the jump with a different animation, perhaps instead of leaping clear out of the water, the dolphins could come to the surface, staying level, and produce a cone of white/light blue potion particles above their heads, as if they were breathing out. This would make the animal still have an interesting characteristic, but it wouldn't be as "dangerous".
Have a look at the vanilla minecraft dolphin's code (if possible, im really only somewhat familiar with modding in the game ARK Survival Evolved so I don't know the ins and outs of minecraft) and see if you can implement the way their jump works. I believe that vanilla dolphins tend to have less issues with beaching themselves, so that could help in making the amazon river dolphin less susceptible to dying from beaching.
Remove the jump entirely, though this could leave a gap in the "displayability" and character of the animal
