Create a pivot table to capture poultry and dairy herd counts for the timeline #18

To keep track of poultry and herd counts can we add a pivot table to our tracker that would have counts per state/location?

@JacqSauer created a pivot table for poultry counts on 07/02/2024, table is filtered out by commercial poultry type to exclude WOAH non-poultry and live bird markets, can be updated based on @scarpino confirms #16
