2 years ago the uninstallation information should be tracked by the system. Software tracking code is a bit complex but we fixed multiple issues recently (notably #11155).
Check with the final release tomorrow if you still have the issue

Bug description
Hello. I noticed that GLPI has information about the date of installation of programs, but could not find information about removing them. At the same time, GLPI checks when importing new inventory logs, if the new data received from the agent does not contain a program that previously existed in the database, then it is deleted. However, this information is not recorded in the GLPI database, but simply deleted. Is this how it should be? Or are you considering adding a program uninstall fixation feature to the database?
