Fix theme to match readthedocs #35

Describe what this PR does My initial PR #34 used the mkdics theme based on my incorrect understanding of readthedocs documentation. This PR updates the theme used when building locally to match the RTD theme that we are forced to use on the RTD site (i.e., make the local build look like the read build).

Is there anything that requires special attention? nope.
