While in LV cannot change the Focus Metering and Focus setting

Is there a reason for that? Exposure Metering can be set. But Focus Metering 
and Focus setting does open the dialog, you can select something else but the 
button remain, e.g. was AF-S, changed it to AF-C but still shows AF-S. If I 
exit LV, do the change then, all is fine.

Probably you need to enable 'host mode' before you enter live view.
Also the properties that have a physical button/control on camera can only be 
changed in 'host mode' (exposure mode, AF mode on some cameras, capture mode on 
some cameras, live view mode photography/movie mode, etc)

As said, in host mode I can change that value. But if I open LV in addition the 
dialog opens and let me chose something else but the new value is not saved. Is 
that normal?

Yes, as I wrote in #1 answer, properties that have a physical button on camera 
can only be changed (in PTP mode) while the camera is in host mode.
