Since my last pr got out of scope I've created this one for just the image optimizations

Converted img tags to the new picture tag
Fixed issues with the layout after introducing correct width and height to images

Uses this awesome gem jekyll_picture_tag

The PR is very outdated now. Closing with the seam reasoning as the other PRs that were made during this time.
