Fix ASCII error in rename_tiff_channels & add more robust test data #84

[ ] I have reset the VERSION_SUFFIX to 0 in the tool's macros file

Also adds better XML test data that includes µ to check for this issue, and includes enough channels to make sure color cycling is working correctly
Added a missing description to scale_cell_coordinates.xml
incremented macros version suffix to 1
