When I use descending order sorting, and if there's not calculated PERCENTAGE and GRADE, Does it ok that Show_Record Screen has descending order based on TOTAL score ?? e.g) TOTAL PERCENTAGE GRADE 270 0.0000
265 0.0000 230 0.0000

Yes you can use total score for sure

Then how about "show_all_records_screen_updated", "calculated_the_final_grades_screen" and "student_screen"? Do I have to order in these screens too for Bonus points?

Yes the order should be for all.

Actually if you sort the array of structure then you can easily do it for all.
