Why?

General project updates due to differences in platform mostly

What?

Window can be resized and maintains resolution - this is better on high-resolution screens like 4K, etc.
Updated .gitignore for Mac filesystem and Git addon for Godot
Set rendering to "Mobile"

The biggest enhancement in this PR is probably the display configurations, with the suggestion you made, so I will close this and open another one with just those updates.
