Hmm... i'm unable to duplicate this in my instance, I'm able to successfully
undelete a 1x1 Contact, and the Contact and Org are both restored. Do you have
any other code or items running in your org?

Just retested this in a brand new org - all it has is the non-profit starter
pack.
When I deleted the contact and looked in the recycle bin all that was there was
the household and the org, so I undeleted both. No sign of the contact either
in the trash or the list of all contacts.
However the organisation has been undeleted, but it has no contacts.

Just turned off households, to see if that was causing the problem, but the
contact is still permanently deleted

Hmm... I'll look into this a bit more closely. Might be a cascade deletion
problem, if that's the case, I'm not sure if it will be fixable.

I have the same problem: with npe01.2.1.4 Contacts & Organisations installed
when a contact is deleted it does not appear in the recycle bin, but the
account and the household do appear. Undeleting the account and or the
household does not undelete the contact, which seems to be permanently deleted.

I faced the same problem as well. When you delete an individual in a one to one
model, it does not send the Contact to recycle only the Org. And if you restore
Org you see it (it also opens up the Accounts page as if it were a real org)
but the contact is not restored.
