I would like to place an image in the background and get the student to place a 
node (or even just click) on a particular area. Is this possible with existing 
widgets?

I don't think this can be achieved with the graph widget

Yes, I don't think that this is what the graph interaction is meant for. 
However, we will be releasing a new image-click interaction with the next 
release which I think fits well with what you're hoping to do. This should come 
out by next week.

(In the meantime, marking this as fixed since the functionality has already 
been implemented. When the next release comes out, please feel free to file 
another issue if you have additional suggestions for the new 'image click' 
interaction!)
