The S in that icon is typographic, with an appropriate stroke weight varying by the part of the path.
The T in the other icon is truly pure geometry, with equal horizontal and vertical strokes (unlike letters designed for larger sizes rather than a low-res pixel grid, where one would never do that).
I have to admit I don’t understand why there are two different icons in the first place!
The S in the Strikethrough S icon is thinner than most icons, including the icon's brother - the regular Format Strikethrough icon, which has a letter T.
