Update README.md to use new plugins DSL #77

Update the README.md file to reflect the new plugins DSL in Groovy and Kotlin, as well as the use of a TOML version catalog.

Hi @maximilian-schwaerzler . The current README reflects the correct usage of the Gradle configuration. This plugin has not been recently updated to the Gradle Plugin portal, which could be misleading. We check this internally first.

There are also some extra files added that we don't need.
