Add Categories to this Repo #135

Categorize all UI issues in the repo on 5 categories:

  1. Triggering the extension (Alt+T / action trigger, etc)
  2. Filtering and Sorting (filter and list)
  3. Interception (switch between monitoring and interception)
  4. Request Modifications
  5. Response Modifications

There's also the background page, and processes (releasing, website) that probably should have their own categories.

Body Editing is probably another category

Added a couple projects for this. I think it's fine as-is.
