This PR adds the latency calculation method used in the quickstep repo (https://chromium.googlesource.com/chromiumos/platform/touchbot/+/refs/heads/main/quickstep/).
This method gives more consistent results when testing using a robot, as it seems to be less sensitive to changes in latency during the measurement.
