Improvements to be Node.JS version >= 18 (LTS and latest) compatible #831

gulp-sass version bump and set a default Sass compiler (cf the error message on https://github.com/googlecodelabs/tools/issues/818)

PS: I closed the old one (on the main branch, due to auto-sync of forks)
