The point about being considered done unilaterally sounds potentially like something more than a soft requirement, shouldn't this in some form be a hard requirement in the contract?
Yes, making it a hard requirement is the main idea. How about:

Eg, it seems obvious to me, but needs to be stated that the chance of doing repeat business with gf or any client is low if you don't get involved in fully meeting the onboarding requirements, or believe you can consider a project "done" in a unilateral way without mutual consent by the customer.
Eg, soliciting feedback from the customer and offering feedi, retrospective style.
