This PR:

Resolves https://github.com/goryn-clade/pathfinder-containers/issues/29
Fixes an issue where lets-encrypt doesn't generate a certificate due to the cert-resolver missing a hyphen
Implements consistency in the container naming schemes
Fixes an issue where environment variables are not referenced correctly on Debian/Ubuntu machines
Corresponding docs updates

Hi All,

Apologies about the delay. Tyr is making a bunch of changes that I believe will resolve this. If not we'll review again later in Feb.
