Test with a mock IdP server

Based on this https://github.com/grafana/django-saml2-auth/issues/25#issuecomment-1620049731, it'd be better to have a mock SAML identity provider, so we can integration-test this library.

Have you made any progress on this? I am releasing a new version and thought we can include this awesome change before the release.
