operator: Add example for connecting loki to grafana >= 9.0.0

What this PR does / why we need it:

The example for connection a Loki Stack provisioned by the operator to Grafana inside OpenShift works only for Grafana versions < 9.0.0. This PR adds an additional example that works for Grafana version > 9.0.0.

Thanks to providing the example goes to @periklis. I am only updating the docs so future users can find the example more easily.
