This PR updates the k6 version in the README.md examples from v0.43.1 to v0.45.1. The update addresses a build issue encountered when creating custom k6 binaries with extensions due to changes in the Prometheus remote write output.

The issue has been resolved in the k6 v0.45.1 patch release, ensuring the examples provided in the documentation work as expected.
