docs: sops and datadog #40

Update documentation and tutorial to include shiny new features:

Loading secrets from SOPS: https://github.com/grafeas/voucher/pull/35
Sending metrics directly to Datadog: https://github.com/grafeas/voucher/pull/37

In the future I'll try to do this inline; this exception is because y'all let SOPS slide (❤️) and the datadog PR is already ~huge.
