Hello. Is there a way to filter the created_at field saved with postgraphile-audit-plugin?

Not without writing a separate plugin that extends this one. It can be done (see Benjie's work on https://github.com/graphile/pg-aggregates for a great example), but I'm not familiar with pgMemento/postgraphile-audit-plugin so I don't know what the level of effort would be.
