Unbundling "Exchange" category into subcategories #90

Rationale

Category Exchange is broad and currently including centralized exchanges(CEX) and non-custodial exchanges(DEX). For projects that refer to these through Everest, it's better to separate DEXs(on-chain activity) and CEXs(off-chain API data).

Ideas

CEX(e.g. Binance, Coinbase)
DEX_AMM(e.g. Uniswap, Balancer, Sushiswap)
DEX_OrderBook(e.g. 0x, dYdX)
Aggregator(e.g. 1inch, Matcha, Totle)

Great suggestion. Do you think CEX is the best name long term? Or Centralized Exchange, Custodial Exchange, or something perhaps more human readable. I agree DEX has taken off as its own term and Decentralized Exchange is pretty long..

I think "Centralized Exchange" is good at the moment. If the term is too long, "Exchanges" sounds also good.

Maybe in the future, "Custodial Exchange" would make more sense in my opinion. I'd like to hear other opinions in the community too.
