Conda environment #4

This pull request is for fixing the issue #3. I updated the environment.yml and provided installation instructions in the README.md. @dhimmel let me know what you think. I don't foresee any issues with the environment.yml, but fingers crossed everything goes well.

Round two for changes. One question I have is for the submodules should I specify branch or are we going to stick with commit hashes?
