GOV.UK Design System: It's clean visually, focused on content and user experience; content follows defined template (example)
Microsoft Style Guide: This is a very comprehensive content style guide, the search in the sidebar makes it easy to find what you're looking for without relying on the navigation
MDN Web Docs: This has a huge amount of content. I like how there are defined content types and each type follows different templates and has a different focus (e.g., tutorials vs reference vs guides)
Human Made Handbook: This has a super simple design, when you glance at the navigation menu it doesn't overwhelm you, and the page templates focus on the content without distractions
REI's design system: Strikes a nice balance between simplicity and some nice design touches. Good use of accordion in the navigation. The table of contents in some pages reminded me of the P4 Handbook's.
Sprout Social: I like this docs site a lot, you can see there's been care put into the design and layouts, but the organisation and breath of content is great. The do/don't components (like on this page) could be useful too.
