Update text for labels and tooltips

A few suggestions from my review:

• You can just use a string instead of a React component for the tooltip
• Remove "string" occurrences in documentation as it's a bit redundant, e.g. "Table name" rather than "Table name string".
• Some tooltips and labels have inconsistent capitalization
• Some tooltips are simply repeating the label. You don't need a tooltip if all the information you need is in the label
