set setConvertUnknownCategoricalLevelsToNa to true #391

Feel free to close this -- I'm opening this PR only as an example for setting setConvertUnknownCategoricalLevelsToNa to true in the scoring engine as it seems like it was requested by multiple folks and seems to be useful in many cases. I don't have any background in Java .. so probably it's not an optimal update, but seems to work.
