Adapt ansible deployment to use /vagrant for paths #9

Currently it deploys code to /opt. It would be nice to not have to redeploy the whole box to just update. There are some minimal notes in the repo about this scenario.

It's difficult to work locally having to re-provision the vagrant box for changes during local development.

Not going to make this a priority right now.
