I have never done it before, so I can't say when, but I'll do it eventually.
I've done it before, it's not terrible, but not loads of fun either. I'm still evaluating my needs after upgrading to Ubuntu 12.
I used to use default config with panels on only the first screen and nautilus's root window turned off. I liked having all workspaces clear except the first, with menus and panels for admin stuff. The new shell UIs are compelling though, but it seems a much more complicated config is required. It's not clear from your description what the behavior is: do the panels/docks/ui-shell float from workspace to workspace or stay on the first one? Is there an awkward gap on fresh workspaces with one window, or is that what this solves?
I'm about to give it a shot, and if it works out I'd be happy give a shot at debianizing the package for eg PPA. In the meantime, can anyone recommend an alternative to unity-2d-* that does what I want? I hope my description was clear enough. Perhaps installing gnome-panel and using it instead or using some other *-shell?
Im sorry, but the developement went to sleep, and I'm not sure if it's going to wake up again. I, switched to using the standart unity2d-panel which works well enough for me. I's certainly not perfect for my needs and I'm only using the Panel. Im also using tilda as a quick terminal and Synapse as an App starter, together these tools (Synapse, Tilda & unity-2d-panel) made my computer pritty efficient.
There are also some other possibilities You could try: Mate-Desktop (gnome2 Fork) or XFCE (which you probably now). The sidepanel could be replaced with a Dock like docky. And there are some stand-alone status bars. Using some haskell-code configuration they should work well together.

I also switched to plain unity 2d panel + Synapse. I wanted to at least port xmonadlog applet to unity 5 but I don't have time or motivation right now. Maybe in the future ;)

I love what you guys are doing, but have you considered creating a PPA? That would make it much easier to install and update the software.
