Sorry for the delay - I've broken out a bunch of my enhancements so we can work on manageable size PRs

Added container-specific user for security
Removed the need to hard-code authentication details for dynamic running
Added OCI standard labels (app version not loading from ARG yet)
Updated the README with some corrections and the new features
Published all the ports for the services

Thanks @arichtman for all your hard work on this pull request.

To be honest it has been a busy Autumn and Winter on my end. I own you an apology for not getting to this pull request sooner; it has been on my todo list for a while! And while I am being honest, I should let you know that I do not have the capacity to give this pull request or future patches the honest effort required keep it top-notch. Mainly because much of the functionality and areas you are working on are not within my expertise. And while I'd love to learn, I have a few high-priority skills I need to strengthen that, right now, don't align with the areas that are touched on in this pull request and other feature requests.

For the time being, I think what I will do is maintain this repository as a minimal working example of how to get an instance of hydroxide running with Docker. Nothing more, nothing less.

I encourage you to continue your work on a fork. If you do so, I'd love a link so that I can learn more about how you have expanded functionality and tightened security.
