Bump express-openapi-validator from 5.3.5 to 5.3.6

Description:

• Bump express-openapi-validator from 5.3.5 to 5.3.6 and remove override
• Downgrade path-to-regexp in swagger-stats to the newly patched 6.3.0
• Re-enable Open API validator middleware
