Remove `packages` and `src` folders after switching images #169

The packages and src folders will become obsolete after switching to upstream Sourcify images. See https://github.com/hashgraph/hedera-sourcify/issues/147 for more details.

Remove these obsolete folders to avoid any future confusion.
