chore: remove soon to be obsolete `packages` and `src` folders #170

This PR removes the soon to be obsolete packages and src folders.

It is a follow up of https://github.com/hashgraph/hedera-sourcify/pull/164 and hence this PR needs to be merged after that.

Fixes #169.
