Update examples to latest Transit to resolve go-jose dependabot issues #266

Manually update the example projects within the repo to import the latest transit wrapper to resolve some of the Dependabot issues around vulnerable go-jose and go-retryablehttp versions that it can't seem to resolve automatically.
