Add design docs for data sources and provider #23

Chatting with Vishnu I found that I forgot to transfer the documentation of the data source + provider implementations 😄

I also added a little blurb about provider schema mapping
I swapped the order of the mapping to match the documentation (required stuff first 👍🏻 ), no outside impact.
