I was a bit unsure whether to delete the stretch dockerfiles for currently supported versions. I opted to delete them just to make contributing for others a bit easier as it isn't obvious which dockerfiles are actively being updated and which aren't. I'll probably get around to writing contributing docs at some point explaining the 'last 2 ghc versions are supported' bits as well.
