Replace all the mentions of CovidEngine with vaxxnz #326

We've renamed the org from CovidEngine to vaxxnz. GitHub automatically handles redirects, so it's not an issue. But to have tidy code and better SEO, we need to replace all the old links with the new ones (CovidEngine->vaxxnz).
