Ty/instructor in agent #101

This PR swaps out zod-gpt for instructor. This gives us better control over object generation + access to many more models.

Basically happy with this, openai functions same as before, Anthropic supports claude-3-5-sonnet-20240620. Opened #102 to preserve our API, merge that and we can merge this.
