Updates to the module for 2021/22 delivery

Changes:

• conda environment: Packages updated to latest versions and all code in notebooks tested manually
• Facebook Prophet: v0.6 -> v1.0.1. import fbprophet -> import prophet. All code tested manually
• Tensorflow: updated to v2.3 -> v2.7.0. Minor change to deprecated lr parameter name in compile method (learning_rate). All code tested manually
• Pytorch: v1.4.0 -> v.10.0. All coded tested manually. No issues detected.
• environment now included plotly and spellchecker extensions for JupyterLab 3.x
• Typo fixes
