Adds more thorough documentation about the two parts of the app, the explorer and the backend.

This PR also refactors a handful of Mapbox-related constants to new environment variables:

NEXT_PUBLIC_MAPBOX_TILESET_ID_ZCTA="herop-lab.489mshpr"
NEXT_PUBLIC_MAPBOX_TILESET_ID_TRACT="herop-lab.dng60lto"
NEXT_PUBLIC_MAPBOX_STYLE='mapbox://styles/herop-lab/clpiysnew00dr01qm8zfve41r'

The two tileset ids probably aren't really appropriate as env vars, so perhaps they should be returned to hard-coded values somehow (for future consideration).
